Make: Goat Cheese and Zucchini Frittata

Yes, it does sort of look like a pizza, but it's actually a tasty GOAT CHEESE AND ZUCCHINI FRITTATA. I made this for a late lunch this past Sunday and couldn't have been happier. It will definitely be a recipe I go back to for say, a boozy brunch? Give the recipe a try below.

Goat Cheese and Zucchini Frittata

  • 2 eggs (I added more eggs as it was for a larger group)
  • 1/8 teaspoon fine sea salt
  • 1/4 teaspoon ground black pepper
  • 1 teaspoon extra-virgin olive oil
  • Few thin slices of red onion
  • 1/2 medium zucchini, thinly sliced
  • 1 ounce fresh goat cheese
  • 1 roasted red pepper from a jar, chopped
  • Small handful fresh herbs such as parsley and chives, roughly chopped
  1. Whisk eggs together with salt and black pepper.
  2. Heat oil in a small cast iron or other ovenproof skillet and cook onion and zucchini 2 to 3 minutes to soften. Add eggs and cook 1 to 2 minutes until almost set.
  3. Dot with goat cheese and roasted red pepper, then sprinkle with herbs. Place under the broiler until golden, 2 to 3 minutes.

  1. Mmmmm that looks so delicious! Any combo of goat cheese + zucchini and I'm in. If you're into quinoa and beans take a look at this super simple recipe I posted on my blog today, it's perfect for summer.

    1. Thanks! That sounds delicious and I will certainly check it out.
