When I found THIS RECIPE I knew it was one I needed to make sooner rather than later and NYE was just the occasion to test it out. In 5 minutes (I kid you not) you have have a healthy appetizer that packs some serious heat. Paired with tortilla chips or crackers, this spread would go great on a pita with some veggies for a nice, light lunch.
White Bean Chipotle Dip
Ingredients:
- 1 (15-ounce) can cannellini beans, drained and rinsed
- 1-3 chipotle peppers in adobo sauce, or more, to taste
- 2 cloves garlic
- 2 tablespoons lemon juice
- 1 teaspoon cumin
- 1 teaspon chili powder
- 1/4 cup plus 2 tablespoons olive oil
Instructions:
- In a food processor, combine cannellini beans, chipotle peppers, garlic, lemon juice, cumin and chili powder.
- With the motor running, add olive oil in a slow stream until emulsified.
- Serve with pita bread or tortilla chips.
You should definitely make this for any upcoming houseguests!
